So now that everything is moved to the new house already, it’s just me, my camera, my laptop, some clothes and some life-saving gadgets in the kitchen. I had the good intentions to start my day with a nice healthy smoothy today when I realised that half of my blender parts are missing and must have been packed by mistake together with the other kitchen stuff. Well, no smoothies for another two weeks I guess. The organisational skills I was talking about …
I don’t even know how it all went so wrong from very early in the morning. Imagine, no husband, no work for the day, no distractions, just me, the laptop and the blog. It all sounded just waaaay too good I guess. Somewhere between the thousands of phone calls I made with my broadband provider about transferring the Internet to the new place, they have decided it’s totally ok to stop my connection with the world a week earlier than expected. Which is pointless to say far from being the truth. It only makes me realise how having a 24/7 connection is kind of an addiction.
Trying to find the positive in every situation, I thought now would be my chance to read the books I’ve always wanted to read but could never find the time before. It actually might be even better – more time to cook and shoot. More time to just sit and relax and think about life.
And somewhere between my blender- wi-fi disasters, I actually dragged myself out of bed and reached the kitchen to make myself something to eat. I don’t know about you, but when I’m all alone in the house I don’t really feel like spending a lot of time cooking some complicated stuff. I stick with the easy and simple recipes (who am I kidding, I always do:D)
Grilled Peach Salad. Yum!
I’m gonna be totally honest with you – it tastes tooo good. Fresh, grilled or roasted, stone fruits, like peach work very well in salads, with cheeses such as feta, halloumi or mozzarella. Pine nuts or toasted seeds are all happy to jump into the mix and when you add a dressing, you’ve got yourself a bit of a gathering.
No, seriously! It takes just a few minutes to put everything together and Voilà! Fresh and light.
