I gotta be honest with you – It’s not an easy job to write about how great an ice cream tastes when a proper storm is forming outside. Yesterday when I made this avocado walnut ice cream was too hot to open the windows, now it’s too cold. You’ll never hear the end of that British weather. But what am I complaining about? It’s not like it’s the end of June…
I don’t know about you, but when I was a kid I was allowed to eat ice cream only in the summer and used to think that when I grew up I would eat ice cream all year round. And nothing else.
Now that I’m all grown up, the picture is a bit different – translation – I kind of realise it won’t be easy to survive on ice cream only, not that I don’t want to.
I’m super relieved that I don’t need an ice cream maker in order to have one. I just can’t be bothered to have another gadget in my kitchen (although I really want to buy one of those bread makers, but that’s a different story).
Have you ever thought that the avocado tastes exactly like young green walnut? I find it very similar and thought they would go well together.
After you have soaked the walnuts and the avocado is frozen it takes literally 5 minutes to make it. It sounds good, doesn’t it? It’s actually less time than to go to the store and buy one. And it’s free from all those nasty things the store-bought ice cream has.
I really hope, wherever you are, you have a proper summer so that you can enjoy the real pleasure of having some of this delicious ice cream. Easy. Vegan. Dairy-free. Sugar-free.
As for me, I am going to grab my cosy jumper and if it happens to turn the heating on I am moving to another country.
