So here’s my first 2017 recipe – Vegan cranberry protein squares with crunchy roasted peanuts.
Maybe a bit late but I’d like to wish you all a very happy new year. 2016 has been really exciting, a year of changes and possibilities and I hope the new one will bring us all even more beautiful moments to cherish and remember.
After all the food we ate around the holidays and after all the leftovers were gone, it was time to prepare something, something sweet, because honestly, around Chirstmas, we were definitely in the mood for savoury dishes.
And as I went a little overboard buying cranberries for that Christmas turkey sauce, these vegan squares made good use of them.
Super simple to make them. You can either bake them for 10-15 minutes or just refrifgerate them. I honestly preferred to bake them for a while cause that way all the ingredients really bonded together and the peanuts became even tastier and crunchier.
I was able to cut 12 squares of the whole batch and if I made the calculations right, one piece should have about 215kcal and 5.7g protein. I have to be honest that even half of it is just perfect as a pre-workout snack. Keep them in the fridge in an airtight box and they should last for a few days.
